How To Make Onion-Crusted Yellowtail
Prepare the key lime butter and mango salsa in advance.
Preheat oil to 350°F (175°C) and coat sliced onions with flour and blackening spice.
Fry the onion rings.
Coat the yellowtail fillets with flour, beaten eggs, chopped onion rings, and panko breadcrumbs.
Pan-fry the yellowtail fillets.

With a crust made with fried onion rings, this yellowtail dish is absolutely delicious and definitely a must-try!
Ingredients
Main
- vegetable oil, for frying
- 1½ cups flour, divided
- 1 tbsp blackening spice
- 4 yellowtail fillets, 6-8 oz each, blood line and pin bones removed
- 1 large yellow onion, sliced
- ½ cup panko breadcrumbs
- 2 eggs, beaten
Key Lime Butter (prep in advance)
- 1 stick butter
- ¼ cup dry white wine
- 6 key limes, juiced
Mango Salsa (prep in advance)
- 4 fresh key limes, juiced
- 1 mango (ripe), diced
- 1 tomato, diced
- 1 green bell pepper, diced
- ½ red onion, diced
- salt and pepper, to taste
Instructions
- Prepare key lime butter and mango salsa in advance. For the key lime butter, melt the butter over medium heat, then add wine and key lime juice. Mix well then let it cool to room temperature. For the mango salsa, add all the ingredients to a mixing bowl and combine well.
- Preheat enough oil in a fryer or deep pan to 350°F (175°C) to fry the onion rings. Add 1 cup flour and 1 tbsp blackening spice to a medium bowl and mix well. Add sliced onions and toss well to coat, shaking off any excess. Carefully add the onion rings to the heated oil and fry for around 5 minutes or until they turn dark brown. Make sure to stir occasionally. Remove the fried onion rings once done and set aside on a plate or cooling rack with paper towels to absorb the excess oil. Let them cool to room temperature.
- Chop the fried onion rings to the size of panko breadcrumbs or pulse with a food processor. Add the chopped onion rings and panko breadcrumbs to a mixing bowl and mix well. Set up another 2 bowls with remaining flour in 1 and beaten eggs in the other. Dredge the yellowtail fillets one by one through flour, eggs, then breadcrumb mixture.
- Add vegetable oil to a large pan over medium-high heat. Pan-fry the yellowtail fillets until cooked through and the crust is lightly browned, around 3-4 minutes on each side.
