Ingredients
Pesto
- 4 poblano chili peppers, peeled with seeds removed
- 3 cloves garlic
- ½ cup cilantro, freshly chopped
- 3 tbsp fresh lime juice
- 1 tsp salt
- ¼ cup chopped walnuts
- ¾ cup olive oil
- ¾ cup Parmesan cheese, freshly grated
Salmon
- 1 wild coho salmon, about 1½ lbs
- ancho chili rub
Instructions
- Preheat oven to 350°F (175°C). Roast poblano chili peppers for 15 minutes, then let them cool slightly.
- Add the peppers to a food processor and pulse. We want them coarsely chopped. Add garlic, cilantro, lime juice, and salt. Pulse mixture until smooth. Add walnuts and process to finely chop them. Drizzle olive oil slowly while pulsing. Add Parmesan cheese and lightly pulse to mix them into the pesto sauce. Transfer to a bowl and set aside.
- Coat coho salmon with ancho chili rub. Grill over medium heat, skin side down, for about 3 minutes. Flip the salmon and grill for another 2 minutes. Transfer carefully to a separate plate.
